Here is the recipe we had today at a very fun tasting!
3 cups thinly sliced zucchini and/or yellow squash
1 cup Bisquick
1/2 cup chopped onion
1/2 cup chopped green pepper, optional
1/2 grated parmesan cheese
4 oz. Mozzarella cheese
1/2 teasp. salt
1/2 teasp. Italian seasoning
fresh chopped basil to taste
1/2 cup vegetable oil
4 eggs slightly beaten
Whisk eggs, add oil, salt, Italian seasoning, parmesan cheese, onion, green pepper and Bisquick. Fold the zucchini and yellow squash into this mixture. Pour into a 9x13 pan and sprinkle mozzarella over the top. Bake at 350 degrees, uncovered, for 25 minutes, or until knife inserted into center comes out clean. This tastes good warm or cold.
